Baking Powder BiscuitsHow to make baking powder biscuits? Simple! Baking Powder Biscuits2 cups all-purpose flour, sifted4 teaspoons baking powder1/2 teaspoon cream of tartar1/2 teaspoon salt2 tablespoons granulated sugar1/2 cup shortening1 egg, unbeaten2/3 cup milkSift flour, baking powder, salt, sugar and cream of tartar into a bowl. Add shortening to flour mixture and blend together until cornmeal consistency. Pour milk into flour mixture slowly; add egg. Stir to stiff dough; knead 5 times. Roll to 1/2 inch thickness. Cut and bake on cookie sheet 10 to 15 minutes at 450 degrees F.Serve with butter, hot from the oven. These can be frozen on cookie sheet.When frozen, store in a closed plastic bag in the freezer. When ready to bake, take out desired amount, and let thaw at room temperature before baking.VariationsAdd 1/2 cup raisins or currants to batter.Add 1/4 teaspoon almond extract or 1/2 teaspoon vanilla extract with the liquid ingredients.Add 1/4 cup shredded cheese. Brazo de Gitano (”Gypsy’s Arm” Rolled Sponge Cake)This is a classic Spanish chocolate cake-rum roll.5 eggs, separated1/4 cup granulated sugar1/4 cup flour1/4 cup cocoa powder1 teaspoon vanilla extract4 tablespoons sifted confectioners sugar1 cup heavy cream, whipped1 1/4 teaspoons rum extract1 tablespoon superfine sugar*Preheat oven to 350 degrees F. Beat egg yolks and 1/4 cup sugar until thick and smooth. Stir in flour, cocoa and vanilla extract. Blend well. Whip egg whites until stiff, but not dry. Fold into yolk and flour mixture. Butter a 15 x 8-inch baking pan. Line with baking parchment paper or wax paper. Butter well again, and dust lightly with 2 tablespoons of the confectioners’ sugar. Pour batter into the pan and spread out evenly. Bake for 15 minutes. Cool for 5 minutes, then turn onto a cloth to cool. After 10 minutes peel paper off. Combine whipped cream, rum and sugar. Adjust to taste. Spread over cake and roll cake like a jellyroll, starting with the long edge. Sprinkle with remaining confectioners’ sugar. Stir in tomatoes, paprika and sugar. Cover and cook over low heat 15 minutes. Stir in sausage; cook uncovered until sausage is hot, about 5 minutes. Top with fried egg.Yields 6 servings.
